Our Craft

The crafting of cognac is the transformation of grapes, through vinification and distillation, an art which requires great imagination, and long term vision.

16th Century Tradition, Cognac Distillation
Distillation has been a tradition in Cognac since the 16th century.  François Méry as cellar master, elaborates cognac at the distillery and cellars that were founded by his grandfather in 1946.  Today he creates exceptional cognacs, in honour of his ancestors.
Faithful to the tradition of his ancestors and know-how of a great cellar master, François distills using his family’s Charentaise copper still.
Double distillation occurs in small batch, the capacity of the still is 20 HL and only the heart cut becomes cognac.  Double distillation ensures that we capture and concentrate the finest aromas of cognac.
Our cognacs have a distinctive style, and one feature of our cognac is the distillation method.  We  distill the wine with its lies, this creates the most powerful cognac, which can endure long aging, a tradition typical of the Grande Champagne Cru.

Cellaring & Blending Cognac

Appellation d’Origine Contrôlée.

There are precise rules regarding the production of Cognac – it has an Appellation of Origin and the rules of production are tightly controlled under French law.  As well as using particular grapes, and double distilling in the traditional way, cognac must be matured for at least two years in French oak barrel.
As the cognac matures, it develops rich aromas, this is a slow and natural process.  The cellar master, ensures the appropriate aging of the eaux-de-vie and then carefully selects each cognac to prepare the finest expression or blend for each cognac in our collection.  We bottle our cognac in our cellars at 40% alcohol/volume.
